Chuck Roast Box of Bison

Chuck roast is the cut that made Sunday dinner a thing. Ours is grass-fed bison, leaner than beef but still turns fall-apart tender when you cook it low and slow.

This is the box you reach for all winter. Pot roast in the Dutch oven, shredded bison in the slow cooker, a pot of stew on a cold day. Chuck has enough marbling to stay moist through a long braise, and because it's bison, you get deeper flavor without the heavy grain-fed fat.
